Get lucky in the New Year with this flavorful black bean and black-eyed pea soup featuring bell peppers, corn, salsa, chili powder, and rice.
Ingredients:
1tablespoonolive oil
1 large onion, chopped
4clovesgarlic, minced
1 (10 ounce) packagefrozen bell pepper strips
black pepper to taste
1cupsweet white corn
1 (16 ounce) jarmedium-hot salsa
1teaspoonchili powder
2 (15 ounce) cansno-salt-added black beans, drained
1 (15 ounce) canblack-eyed peas, rinsed and drained
1 (10.5 ounce) canchicken stock
1cubechicken bouillon
0.5 cupuncookedlong grain rice
Instructions:
In a deep pot over medium-high heat, heat olive oil. Add onion, garlic, and bell peppers; cook until onions are transparent and peppers are soft, approximately 10 minutes. Season with black pepper to taste. Combine corn, salsa, chili powder, black beans, black-eyed peas, chicken stock, chicken bouillon cube, water, and rice. Bring to a boil, then simmer over medium heat for at least 30 minutes until rice is tender.
