Indulge in a British classic: Somerset pork chops with onions, apples, and a rich hard cider cream sauce.
Ingredients:
0.25 cupbutter
4boneless pork loin chops
1teaspoonchoppedfresh thyme
1 large onion, sliced into thin rings
1clovegarlic, crushed
1Cox apple, cored and cut into thick rings
1red apple, cored and cut into rings
1teaspoonwhite sugar
1.125 cups dry hard cider
salt and pepper to taste
3tablespoons heavy cream
Instructions:
Preheat the oven to 375°F (190°C) for the perfect cooking temperature.
Heat 2 tablespoons of butter in a large oven-proof skillet until melted over medium-high heat. Sear pork chops until golden on both sides. Transfer to a 2-quart casserole dish, sprinkle with thyme, and cover.
Melt the remaining butter in the skillet. Sauté onion and garlic until tender, then transfer to the casserole dish. Quickly sear apple rings in the skillet on both sides for color, then add to the casserole dish. Sprinkle with sugar.
Remove any extra fat from the skillet, then pour in cider, scraping up any flavorful bits from the bottom. Simmer until slightly thickened, then drizzle over the pork chops and apples in the dish. Season with salt and pepper to taste.
Bake covered in the preheated oven for 30-40 minutes until the center is no longer pink and reaches an internal temperature of at least 145°F (63°C).
Place the pork chops and apples onto a beautiful serving platter. Blend in the cream with the skillet juices, then generously pour over the pork chops.
