Turn sourdough discard into decadent waffles for a leisurely weekend brunch.
Ingredients:
  • 1 cup sourdough starter
  • 1 cup plain yogurt
  • 1 cup all-purpose flour
  • 1 tablespoon brown sugar
  • 0.25 cup butter, melted and cooled
Instructions:
  • The night before making the waffles, mix sourdough starter and yogurt in a bowl. Stir in flour and brown sugar until well combined. Cover the batter and refrigerate for 8 hours or overnight.
  • Preheat your waffle iron as directed by the manufacturer.
  • In a large bowl, whisk the egg until frothy. Stir in melted butter and vanilla extract. Mix in baking soda and salt. Add the sourdough starter mixture and stir until batter is fully incorporated.
  • Pour the batter into the waffle iron and cook until golden brown, for approximately 3 minutes per waffle.
