Delicious sous vide cod cooked to tender perfection in a lemon butter sauce, with minimal effort for impressive results.
Ingredients:
  • 2 (4 ounce) cod loins
  • 1 pinch salt and freshly ground black pepper
  • 1 lemon
  • 2 teaspoons butter
  • 1 shallot, thinly sliced
Instructions:
  • Fill a large pot with water, attach an immersion circulator, set the temperature to 130°F (54°C), and the timer to 35 minutes.
  • Sprinkle cod with a touch of salt and pepper. Add 1/2 of the lemon zest, 1 teaspoon of butter, and 2 lemon slices on top of each piece.
  • Divide the shallot slices evenly into 2 resealable plastic bags. Lay a cod loin over the shallots in each bag, then seal the bags, leaving a small corner open.
  • Submerge the bags in the hot water to remove all air. Seal the corners and set the timer.
  • Once the timer sounds, discard the bags. Gently place the cod on serving plates. Drizzle 1 tablespoon of cooking liquid from each bag over each loin. Finish by garnishing with additional lemon slices.
