Sous Vide Dill Pickles

Easy homemade sous vide pickles made even without a sous vide cooker - just use a sunny windowsill!
Ingredients:
  • 12 pounds pickling cucumbers
  • 6 cloves garlic
  • 6 heads (flowers) dill
  • 4 cups water
  • 2 cups white vinegar
  • 0.5 cup kosher salt
  • 0.5 teaspoon alum
Instructions:
  • Place the cucumbers, garlic, and dill in a resealable plastic bag. Mix water, vinegar, kosher salt, and alum in a liquid measure, then pour the mixture into the bag and seal it tightly.
  • Place the bag in a heat-proof container of water with a sous vide cooker. Cook at 140 degrees F (60 degrees C) for 2 1/2 hours.
  • Discard the bag and let it cool for about 1 hour. Place the pickles and brine in a jar, then refrigerate for 24 hours before serving.
