Sous vide flan in jars for a creamy, hassle-free dessert perfect for sharing.
Ingredients:
  • 0.75 cup white sugar
  • 8 4-ounce Mason® jars with lids and rings
  • 1 (14 ounce) can sweetened condensed milk
  • 1 (12 fluid ounce) can evaporated milk
  • 1 tablespoon vanilla extract
Instructions:
  • Prepare a large heat-proof container filled with water and insert the sous vide cooker. Heat the water bath to 179 degrees F (82 degrees C).
  • In a small saucepan over medium heat, caramelize the sugar until golden brown, approximately 5 minutes. Divide the hot caramel evenly among eight 4-ounce Mason jars, ensuring the bottom of each jar is covered.
  • Combine the sweetened condensed milk, evaporated milk, eggs, and vanilla extract in a separate bowl. Pour the mixture into the jars and seal them tight.
  • Place the jars in the water bath, then set a timer for 1 hour.
  • Remove the jars from the water bath and allow the flan to cool for about 20 minutes until it's safe to handle.
  • Carefully release the seal on the jars and use a small rubber spatula to loosen the flan from the sides. Place a plate on top of each jar, then invert and gently shake to release the flan onto the plate.
