Sous vide Sesame Chicken with tender juicy meat, no deep-frying needed. Tossed in spicy sauce for a delicious twist.
Ingredients:
  • For the chicken:
  • 1 1/2 pounds chicken breast, cubed into 1-inch pieces
  • 1-inch piece fresh ginger, thinly sliced
  • 2 cloves garlic, smashed
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon rice wine vinegar
  • For the sesame sauce:
  • 1/4 cup soy sauce
  • 1/4 cup rice wine vinegar
  • 1/3 cup honey
  • 1 tablespoon cornstarch
  • 1/3 cup chicken stock or water
  • 1 tablespoon sesame seeds
  • 2 teaspoons sesame oil
  • 1 teaspoon chili garlic sauce (optional)
  • Sesame seeds, garnish
  • To serve:
  • Cooked white rice
  • Scallions, green parts minced for garnish
Instructions:
  • Prepare a sous vide water bath: Fill a pot with water and insert your immersion circulator. Set the temperature to 158°F and allow the water to preheat.
  • Marinate the cubed chicken breast with ginger, garlic, sesame oil, soy sauce, and rice wine vinegar in a gallon-sized zip-top freezer bag, ensuring the chicken is in a single layer.
  • Submerge and seal: Use the water-displacement method to remove air from the bag with the chicken. Lower the bag into the water slowly, letting the water pressure push out the air. Seal the bag once all the air is out, ensuring it is mostly submerged. Keep chicken aside until water is heated.
  • Submerge the sealed bag of chicken in the water once it has reached the desired temperature, ensuring it is completely covered. Let it cook for 2 hours. Afterward, take out the chicken from the water and switch off the circulator.
  • Prepare the sauce by whisking all the ingredients in a skillet until simmering and thickened. Remove the chicken from the bag, discard garlic and ginger, and add the chicken to the thickened sauce. Cook on low heat, tossing until the sauce coats the chicken nicely.
  • Present the sesame chicken over a bed of fluffy rice adorned with sesame seeds and fresh scallions.
