Southwestern Pork Burritos

Savory slow-cooked Southwestern pork burritos.
Ingredients:
  • 2 1/2-pound well-trimmed pork boneless shoulder roast
  • 1 can (10 ounces) diced tomatoes and green chilies, undrained
  • 3 tablespoons tomato paste
  • 1 tablespoon honey
  • 3 cloves garlic, finely chopped
  • 1 tablespoon chili powder
  • 12 flour tortillas (8 to 10 inches in diameter)
  • Assorted toppings (such as shredded Cheddar cheese, sour cream, chopped fresh cilantro, shredded lettuce, diced tomatoes), if desired
Instructions:
  • Place the pork in a cozy 3 1/2- to 4-quart slow cooker.
  • Blend tomatoes, tomato paste, honey, garlic, chili powder, and salt in a blender on medium-high speed for 10 seconds, pausing to scrape the sides, then pour the mixture over the pork.
  • Slow cook, covered, on low heat for 8 to 10 hours until pork is melt-in-your-mouth tender.
  • Transfer the pork to a cutting board and shred using 2 forks. Mix the shredded pork back into the cooker until well combined.
  • Keep warm the flavorful pork mixture on a low heat setting for up to 2 hours and serve with warm tortillas and assorted toppings.
