Indulge in a Southwestern delight with bean, corn, and salsa-topped cheesy potato patties.
Ingredients:
  • 1 bag (1 lb 4 oz) refrigerated southwest-style shredded hash brown potatoes
  • 3 eggs, beaten
  • 1 cup shredded Cheddar cheese (4 oz)
  • 1/2 cup Original Bisquick™ mix
  • 1/2 teaspoon garlic salt
  • 1/4 cup vegetable oil
  • 1 can (11 oz) whole kernel corn with red and green peppers, drained
  • 1 can (15 oz) Progresso™ black beans, drained, rinsed
  • 1/4 cup thick & chunky salsa
  • Sour cream, if desired
Instructions:
  • Combine potatoes, eggs, cheese, Bisquick mix, and garlic salt in a large bowl.
  • Heat 2 tablespoons of oil in a 12-inch skillet over medium heat. Spoon about 1/2 cup of potato mixture into the skillet for each patty and flatten with a spatula.
  • Sear patties for about 4 minutes, flipping once, until beautifully golden. Set aside, cover to keep warm, and add extra 2 tablespoons of oil to the skillet as necessary to avoid sticking.
  • Heat corn, beans, and salsa in a 2-quart saucepan over medium heat for 2-3 minutes, stirring occasionally, until heated through. Serve over patties and garnish with sour cream.
