Irresistible grilled corn salad with peppers, onion, and zesty lime cilantro dressing steals the spotlight.
Ingredients:
  • 8 ears fresh corn in husks
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 red onion, chopped
  • 1 cup chopped fresh cilantro
  • 0.5 cup olive oil
  • 4 cloves garlic, peeled and minced
  • 3 limes, juiced
  • 1 teaspoon white sugar
  • salt and pepper to taste
  • 1 tablespoon hot sauce
Instructions:
  • Place the corn in a large pot, ensuring it is fully submerged in water, and let it soak for at least 15 minutes.
  • Preheat grill to high heat, then gently pull off the silks from the corn while keeping the husks intact.
  • Grill the corn until tender, turning occasionally for about 20 minutes. Let it cool slightly, then remove and discard the husks.
  • Cut the fresh corn kernels off the cob and combine them in a medium bowl with the diced red bell pepper, green bell pepper, and red onion.
  • Combine cilantro, olive oil, garlic, lime juice, sugar, salt, pepper, and hot sauce in a blender or food processor. Blend until creamy, then mix into the corn salad.
