Soybean milk is a nutritious dairy-free option packed with protein, fiber, and phytonutrients. It can help lower cholesterol and is ideal for people with lactose intolerance.
Ingredients:
  • 1.75 cups dried soybeans
  • 2 quarts water
  • 1 pandan leaf
  • 1 slice fresh ginger root
Instructions:
  • Begin by soaking beans overnight in water. The following day, drain, rinse, and discard the water. Combine the soaked beans with 2 quarts of fresh water. Using a food processor or blender, blend the beans with water until smooth.
  • Pour the mixture into a pot lined with a double layer of cheesecloth or a fine sieve. Introduce pandan leaf or ginger, and sweeten with sugar as desired. Bring the soy milk to a boil for 15 minutes, stirring often to avoid skin formation. Discard the pandan leaf or ginger, and infuse with vanilla. Adjust sugar to taste. Allow to cool to room temperature then chill in the refrigerator.
