Savory veggie hash with vegetarian Soyrizo and eggs - a quick, healthy breakfast option. Ready in under 30 minutes.
Ingredients:
1tablespoonolive oil, or as needed
1 medium onion, chopped
1 medium carrot, chopped
1 medium zucchini, chopped
1cupchoppedspinach
1 (12 ounce) packagesoy chorizo, crumbled
1tablespoonbutter, or as needed
4 large eggs
Instructions:
In a large skillet over medium heat, sizzle olive oil until shimmering. Sauté onion, carrot, and zucchini until just tender, around 5 minutes. Toss in chopped spinach and cook for an additional 2 minutes.
Transfer all ingredients to one side of the pan, then introduce soy chorizo and cook until golden brown and heated through, stirring occasionally for 2 to 4 minutes.
Melt butter in a skillet over medium heat, crack eggs in, cook until edges are opaque (about 1 minute). Cover, reduce heat to low, cook until whites are fully set (about 4 minutes).
Plate eggs alongside flavorful sauteed vegetables and savory soyrizo.
