Quick and elegant pasta with clams, topped with savory Parmesan. Perfect for any occasion.
Ingredients:
  • 0.5 pound uncooked pasta
  • 0.25 cup butter
  • 0.5 cup chopped onion
  • 3 garlic cloves, peeled and chopped
  • 2 (8 ounce) cans chopped clams, drained with juices reserved
  • 0.25 cup fresh parsley, minced
  • 2 tablespoons olive oil
  • water
  • 1 (3 ounce) package freshly grated Parmesan cheese
Instructions:
  • Bring a large pot of salted water to a boil, then cook the pasta for 8 to 10 minutes until al dente. Drain well.
  • In a large skillet over medium-low heat, melt butter until sizzling. Sauté onions and garlic until fragrant and onions are translucent, about 5 minutes. Add clams and cook until lightly browned, stirring often for about 3 minutes. Finish by adding parsley, olive oil, and the clam juice-water mixture to total 2 cups liquid.
  • Turn up the heat and bring it to a gentle boil. Lower the heat to let it simmer, cover, and cook for 15 minutes, giving it an occasional stir. Enjoy over pasta with some freshly grated Parmesan cheese on top, if you prefer.
