Spaghetti meatball muffins topped with Parmesan - perfect for parties or gatherings.
Ingredients:
  • 6 ounces spaghetti
  • 1.5 tablespoons olive oil
  • 1.5 cups grated Parmesan cheese, divided
  • 1.5 cups tomato-based pasta sauce
  • 12 (1 ounce) cooked meatballs
Instructions:
  • 1. Boil a large pot of lightly salted water. Add spaghetti and cook until al dente, stirring occasionally, for about 7 minutes. Drain and mix in a bowl with olive oil. Refrigerate for about 15 minutes until cooled.
  • Preheat the oven to 375 degrees F (190 degrees C) and lightly coat a 12-cup muffin tin with cooking spray.
  • Coat cooled spaghetti in 1 cup of savory Parmesan cheese. Distribute spaghetti evenly among the muffin cups, shaping nests to hold the meatballs.
  • Place a dollop of pasta sauce on each nest, add a meatball, another dollop of pasta sauce, and finish by sprinkling Parmesan cheese over the tops.
  • Bake in the preheated oven for 20-25 minutes until pasta and meatballs are heated through and cheese melts. Allow to cool slightly before transferring to a serving platter.
