Kid-friendly spaghetti bolognese with hidden veggies.
Ingredients:
  • 4.60 gm olive oil
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 2 zucchini, finely chopped
  • 1 carrot, peeled, finely chopped
  • 400g beef mince, Heart Smart
  • 700ml tomato pasta sauce
  • 400g spaghetti
  • 40.00 ml chopped fresh continental parsley
Instructions:
  • In a pan over medium heat, sauté onion, garlic, zucchini, and carrot for 8-10 minutes, uncovered, until softened and fragrant.
  • Turn up the heat and add the minced meat. Sauté for 2-3 minutes while stirring constantly. Pour in the pasta sauce and 1/4 cup (60ml) water, then bring it to a gentle simmer. Lower the heat and let it simmer without a lid for 15 minutes. Don't forget to season to taste.
  • Prepare spaghetti following instructions until perfectly cooked. Drain.
  • Serve individual portions of spaghetti in bowls. Top each with the cooked mince and a sprinkle of fresh parsley for a burst of color and flavor.
