Indulgent spaghetti squash gratin with creamy sour cream, gooey Cheddar cheese, and buttery low-fat margarine.
Ingredients:
  • 1 spaghetti squash, halved and seeded
  • 3 tablespoons light margarine
  • 1 teaspoon red pepper flakes
  • 0.25 teaspoon garlic powder
  • salt and freshly ground black pepper to taste
  • 0.75 cup fat-free sour cream
  • 1 cup shredded light Cheddar cheese
  • cooking spray
Instructions:
  • Place the spaghetti squash in a covered dish with 1/4 inch of water, then microwave for 10 to 12 minutes. Use a fork to scrape out the insides of the squash and transfer to a small bowl.
  • In a medium skillet over medium heat, heat the margarine until melted. Add the onion, red pepper flakes, garlic powder, salt, and pepper. Cook until the onion is browned, about 5 to 10 minutes, while the spaghetti squash is cooking.
  • Preheat the oven to 375 degrees F (190 degrees C) and generously grease a baking dish with nonstick cooking spray.
  • Combine spaghetti squash, onion mixture, sour cream, and half of the Cheddar cheese. Spread mixture into baking dish and sprinkle remaining Cheddar cheese on top.
  • Bake in the oven for 20-25 minutes, then broil for 2-3 minutes until golden brown on top.
