Spaghetti squash primavera: Spaghetti squash with zucchini, bell pepper, tomato, topped with feta cheese for a fresh twist on Italian pasta.
Ingredients:
  • 1 spaghetti squash
  • 2 tablespoons extra-virgin olive oil
  • 1 large clove garlic, minced
  • 1 large zucchini, cut into bite-size pieces
  • 1 green bell pepper, chopped
  • 1 tablespoon dried Italian herb seasoning
  • fresh ground black pepper, to taste
  • 1.5 cups chopped tomato
  • 0.75 cup crumbled feta cheese
Instructions:
  • Poke the spaghetti squash shell with a fork and place it in a microwave-safe dish. Microwave on high for 12 minutes. Let it cool before handling.
  • Cut the squash in half lengthwise and scoop out the seeds. Use a fork to shred the flesh into strands, then transfer to a large bowl.
  • In a large skillet, sauté onion in olive oil over medium heat until just tender, about 3 minutes. Add garlic and cook for another 3 minutes. Mix in zucchini and green bell pepper; season with Italian herbs and black pepper.
  • Add tomatoes to the skillet and cook until warmed through, about 3 to 5 minutes. Introduce squash strands to the skillet and toss to combine. Sprinkle with feta cheese and toss once more before serving.
