Spaghetti Squash Tacos

Spicy taco-seasoned spaghetti squash is the perfect veggie twist for Taco Tuesday!
Ingredients:
  • 1 large spaghetti squash, halved and seeded
  • 2 teaspoons vegetable oil
  • 1 (1.25 ounce) package dry taco seasoning mix
  • 1 small onion, diced
  • 1 jalapeno pepper, seeded and diced
  • 1 pinch salt, to taste
  • 12 crisp taco shells
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and place the squash halves cut-side down in a baking dish.
  • Roast the squash in the oven until soft and tender, for about 30 to 40 minutes.
  • Using a fork, separate the squash from the rind into short strands and set aside.
  • In a skillet over medium heat, sauté the onion and jalapeno in vegetable oil until caramelized, about 7 to 10 minutes. Stir in squash and taco seasoning; cook for an additional 5 minutes. Season with salt and spoon into taco shells before serving.
