Delicious spaghetti squash with savory mushrooms in marinara sauce, topped with grated Parmesan cheese.
Ingredients:
  • 1 spaghetti squash
  • Olive oil
  • Salt and pepper
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 2 cups sliced cremini mushrooms
  • 1 teaspoon chopped fresh thyme leaves or 1/2 teaspoon dried
  • 4 cups your favorite marinara pasta sauce
  • Grated Parmesan cheese
Instructions:
  • Preheat oven to 375°F.
  • Halve squash lengthwise with a sharp knife, removing and discarding seeds. Arrange squash halves cut side up in a sturdy roasting pan. Brush with olive oil, then season with salt and pepper.
  • Roast until squash is easily pierced with a fork, adding a drizzle of olive oil if needed to keep it moist.
  • Take the roasted squash out of the oven and allow it to cool slightly until it's easy to handle, which should take about 3 to 4 minutes.
  • Create delicate, squash "noodles" on a serving platter by scraping the flesh using a fork. Gently separate any clumped strands with your hands as needed.
  • Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook garlic for 2 minutes, then add mushrooms and cook for about 3 minutes. Stir in thyme during the last minute of cooking.
  • Reserve the mushrooms for later use.
  • Pour the warm marinara sauce over the spaghetti squash. Sprinkle with mushrooms and a lavish layer of grated Parmesan cheese.
