Spaghetti with watercress pesto and crab

Budget-friendly and quick pasta main that’s fancy but easy!
Ingredients:
  • 200g spaghetti
  • 1 garlic clove, crushed
  • 1 bunch watercress, leaves picked
  • 50g grated parmesan
  • Zest and juice of 1 lime
  • 50g toasted pine nuts, plus extra to garnish (see Notes)
  • 200g fresh crab, or canned crab meat
Instructions:
  • Prepare pasta in a large pot of boiling salted water following the package directions.
  • Prepare the pesto by blending all remaining ingredients (excluding crab) in a food processor with 1/3 cup (80ml) water and a generous amount of seasoning until smooth.
  • After cooking the pasta, toss it back into the pan. Mix in the flavorful pesto until the pasta is well coated. Carefully break apart the crab and fold it in. Serve promptly, topped with extra pine nuts for added crunch.
