Spanakopita

Indulge in Greek flavors with spanakopita: a savory, feta and spinach-filled treat that your family will love!
Ingredients:
  • 2 brown onions, finely chopped
  • 600g baby spinach, washed, dried, trimmed
  • 62.50 ml dill leaves, chopped
  • 900g Greek feta cheese, grated
  • 1 tsp black pepper
  • 6 eggs, lightly beaten
  • 375g packet filo pastry (see tip)
  • 100g butter, melted
Instructions:
  • In a large frying pan over medium heat, sauté onion and garlic in oil until soft, about 6 minutes. Stir in spinach and dill. Remove from heat, cover, and let sit for 5 minutes until spinach wilts. Drain excess liquid through a sieve by pressing with a wooden spoon. Transfer mixture to a large bowl and combine with feta, pepper, egg, salt, mixing well.
  • Preheat your oven to 200°C and generously grease a 5cm deep, 30cm x 38cm (base) baking dish as directed.
  • - Start by placing 1 pastry sheet on a clean surface. Brush it with some melted butter. Layer another 2 pastry sheets on top, brushing each with butter. Continue layering the pastry sheets, buttering every other layer, until you have 10 layers in total. Use these buttery layers to line the base of your baking dish. Spoon the spinach mixture over the pastry.
  • With the 10 remaining pastry sheets and butter, layer over spinach filling as in step 3. Use a sharp knife to score the top of the pastry into 24 squares, then brush with butter. Bake for 45 to 50 minutes until golden and crisp. Cool completely in pan and refrigerate, covered, for 4 hours or overnight if preferred.
  • Slice the spanakopita into squares and enjoy it either warm or cold (reheating instructions can be found in the notes section).
