Spanakopita

Upgrade your spanakopita with fresh spinach in our authentic Greek recipe.
Instructions:
  • Preheat oven to 350°F. Heat 2 tablespoons of oil in a large skillet over medium heat. Stir in the spinach until just heated through. Remove from skillet and set aside.
  • In the same skillet, heat the remaining tablespoon of oil over medium-high heat. Cook the onions until soft, stirring occasionally. Reduce the heat to low, then add the spinach, parsley, salt, and pepper. Cook for about 2 more minutes. Remove the skillet from the heat and let it cool slightly before stirring in the cheese and egg.
  • Prepare the baking dish by generously brushing it with melted butter. Start layering the dish with 1 phyllo sheet, brushing it with butter. Continue layering with 7 more sheets, brushing each one with butter before adding the next. Spoon the spinach mixture over the top sheet. Layer the remaining 8 phyllo sheets on top, brushing each with the remaining butter. Finish by cutting several slits in the top layer.
  • Bake until golden brown, about 40-50 minutes. Allow to rest for 15 minutes before slicing.
