Delicious Greek spinach pie made with feta, ricotta, and herbs in flaky phyllo. A twist on traditional Spanakopita made as a quick and easy casserole. Perfect as a side dish or main course for vegetarians.
Ingredients:
  • 2 (16-ounce) packages frozen chopped spinach, thawed
  • 1 bunch scallions, thinly sliced, including some of the green part
  • 3 large eggs, lightly beaten
  • 8 ounces (about 1 1/2 cups) crumbled feta
  • 8 ounces (1 cup) whole milk ricotta
  • 3 tablespoons chopped fresh dill
  • 1/3 cup chopped fresh parsley
  • 8 ounces (2 sticks) unsalted butter, melted
  • 1 pound phyllo (filo) dough (about 18 sheets), defrosted in the refrigerator
Instructions:
  • Preheat the oven to 375°F with the rack positioned in the center.
  • Press out excess moisture from spinach using a towel or your hands, ensuring it is thoroughly dried. Keep aside.
  • Sauté the scallions: Heat oil in a small saucepan over medium heat. Add scallions and cook, stirring, for 2 minutes until soft but not browned. Let cool briefly before using.
  • Prepare the filling by gently whisking the eggs in a large bowl. Mix in the scallions, feta, ricotta, dill, parsley, salt, and drained spinach, and stir until well combined.
  • Prepare the pie crust: Grease a 9x13-inch baking dish with melted butter. Unwrap the phyllo sheets and place them beside the dish. Brush butter on the top of the first phyllo sheet and lay it in the dish. Continue layering with buttered phyllo sheets until you have 9 layers, letting excess hang over the edges. Spread the filling evenly over the phyllo. Top with another buttered phyllo sheet and repeat layering with the remaining 8 sheets.
  • Trim the excess phyllo dough so the edges are flush with the pan. Then make 4 vertical cuts and 3 horizontal cuts on top to form 12 squares, being careful not to cut too deeply into the filling.
  • Bake the pie until the phyllo is golden brown, which should take between 35 to 40 minutes.
