Quick, budget-friendly meal made with only six ingredients!
Ingredients:
  • 660g chicken thigh
  • 2 small red onions, cut into thin wedges
  • 400g jar tomato and basil pasta sauce
  • 100g artichoke hearts, drained, quartered
  • 125.00 ml pitted kalamata olives
Instructions:
  • In a large saucepan over medium-high heat, sizzle chicken in half the oil until beautifully golden on each side, about 3 to 4 minutes per side. Plate and set aside.
  • Heat the remaining oil in a pan and sauté the onion until softened, about 3 to 4 minutes. Return the chicken to the pan, then add the pasta sauce, artichokes, olives, and 1/4 cup of cold water. Season with salt and pepper, bring to a boil, then reduce the heat, cover, and simmer on low.
  • Simmer and stir for 12 to 15 minutes until the chicken is fully cooked. Serve and enjoy!
