Spanish Lamb and Couscous

Try these succulent lamb chops cooked in a flavorful sauce and served with couscous for a distinctive and wholesome meal, perfect for dinner.
Ingredients:
  • 4 lamb sirloin chops, 1/2 inch thick (about 2 pounds)
  • 1 medium green bell pepper, chopped (1 cup)
  • 1/4 cup chili sauce
  • 1 can (14 1/2 ounces) Muir Glen™ diced tomatoes, undrained
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried marjoram leaves
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 cup pitted ripe olives, cut in half
  • 2 tablespoons chopped fresh parsley
  • 2 cups hot cooked couscous
Instructions:
  • Spritz a 12-inch nonstick skillet with cooking spray and heat over medium. Sear lamb in the skillet, flipping once, until golden on both sides.
  • Combine the vibrant bell pepper, zesty chili sauce, juicy tomatoes, aromatic cumin, fragrant marjoram, garlic powder, and a sprinkle of salt into the pan. Lower the heat to medium-low, cover, and let it simmer for around 10 minutes until the lamb is perfectly tender and slightly pink in the center.
  • Incorporate olives and garnish with fresh parsley. Enjoy with couscous.
