Spanish omelette

Hearty Spanish omelette filled with spicy chorizo sausage.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 1 (about 120g) chorizo sausage, thinly sliced
  • 1 red onion, chopped
  • 1 small (about 200g) red capsicum, halved, deseeded, cut lengthways into strips
  • 1 (about 150g) ripe tomato, roughly chopped
  • 1.25 gm sweet paprika
  • 6 eggs
  • 40.00 gm water
  • Salt & freshly ground black pepper
  • 40.00 ml roughly chopped fresh continental parsley
Instructions:
  • In a 22cm heavy-based frying pan over medium heat, sizzle sausage in oil until golden brown. Transfer to a bowl. Lower heat to medium-low, then sauté onion and capsicum until onion is soft. Stir in garlic until aromatic.
  • Put the sausage back in the pan along with the tomato and paprika. Cook while stirring for 1 minute. Evenly spread the mixture in the pan and set it aside for later use.
  • Begin by cracking eggs into a bowl, then add water and whisk until well combined. Season with salt and pepper. Preheat the grill to medium heat. Next, pour the egg mixture over the sausage mixture in a pan. Cook over medium heat for 8-10 minutes until nearly set. Transfer the pan to the preheated grill and cook for an additional 1-2 minutes until fully cooked. Finish by removing from the heat and garnishing with parsley.
