Create a delicious meal with just 4 ingredients!
Ingredients:
  • 1 chorizo sausage, thinly sliced
  • 1 large brown onion, halved, cut into thin wedges
  • 18.20 gm olive oil
  • 2 (about 450g) Golden Delight potatoes, peeled, thinly sliced (see note)
  • 10 eggs
  • 125ml (1/2 cup) water
Instructions:
  • 1. Preheat a large non-stick frying pan over medium heat. Sear the chorizo for 2 minutes per side until nicely browned. Place in a bowl. Then, sauté the onion in the same pan for 3 minutes until lightly golden and tender. Transfer to a separate bowl.
  • 1. Heat the oil in a pan over medium heat until shimmering. Layer half of the potatoes in the pan, slightly overlapping to fully cover the base. Top with half of the chorizo and half of the onion. Repeat with the remaining potatoes, chorizo, and onion.
  • In a large bowl, vigorously whisk together eggs, water, salt, and pepper until well combined. Pour the mixture into the pan and lower the heat to medium-low. As the omelette begins to set, gently lift the edges to let any uncooked egg flow underneath. Repeat this process a few times while cooking. Cook for 20-25 minutes or until nearly firm.
  • Preheat the grill on high and cook for 5-10 minutes until golden.
