Quick and flavorful Spanish-inspired rice dish with traditional paella flavors.
Ingredients:
  • 2 (260g total) chorizo sausages, sliced
  • 1 medium red onion, halved, thinly sliced
  • 5.00 gm smoked paprika
  • 500.00 ml Roasted capsicum (see notes), thinly sliced
  • 1040.00 gm Fresh tomato sauce (see related recipe)
  • 750g medium green king prawns, peeled, deveined, tails intact
  • 600.00 gm Pea and green onion rice (see notes)
  • Chopped fresh flat-leaf parsley leaves, to serve
  • Lemon wedges, to serve
Instructions:
  • In a large frying pan over medium-high heat, heat oil. Add chorizo and cook, stirring, for about 5 minutes until browned. Transfer chorizo to a plate lined with paper towel.
  • Sauté the onion until softened, then add garlic and paprika and cook until aromatic. Add capsicum and cook for 2 more minutes. Stir in the tomato sauce and bring to a boil.
  • - Lower the heat to medium, then introduce the prawns. Sauté while stirring for 3 to 5 minutes until the prawns slightly change color. Follow by adding the rice and gently stirring. Continue cooking for another 3 to 5 minutes until the rice is heated through and the prawns are fully cooked. Season with salt and pepper, sprinkle with parsley, and serve with lemon wedges.
