Mouthwatering Bruneian beef recipe featuring dried shrimp for added flavor. Pair with steamed or spiced rice.
Ingredients:
  • 1 pound beef round, diced
  • 2 tablespoons cooking oil
  • 0.75 cup dried shrimp, minced
  • 1 clove garlic, minced
  • 1 tablespoon chopped lemon grass
  • 2 onions, chopped
  • 1.75 cups coconut milk
  • 0.5 cup red curry paste, or to taste
  • 3 tablespoons turmeric powder
  • 1 fresh red chile pepper, finely chopped
  • 1 bunch fresh cilantro, chopped
Instructions:
  • Tenderize the beef by gently simmering it in a saucepan filled with water for at least an hour. Once done, remove the beef from the water and set it aside.
  • In a wok over medium-high heat, heat the oil. Add garlic and dried shrimp, stir-fry briefly, then add lemongrass and onions. Lower the heat to medium, stir in coconut milk, red curry paste, turmeric, and chile pepper. Add beef, cover, and simmer for 10 minutes.
  • Just before serving, gently fold in the fresh cilantro. Reserve a few sprigs for a beautiful garnish, if desired.
