Whip up quick and delicious Chinese fried rice in just 30 minutes. Perfect for busy nights!
Ingredients:
  • 2 eggs, lightly beaten
  • 1 tsp sesame oil
  • 18.20 gm peanut oil
  • 3 dried Chinese pork sausages, thinly sliced (see note)
  • 1 medium brown onion, finely chopped
  • 4cm piece fresh ginger, peeled, finely grated
  • 1 long red chilli, finely chopped (optional)
  • 40.00 ml shao hsing (Chinese rice wine)
  • 4.50 gm white sugar
  • 1000.00 gm cold cooked white long-grain rice
  • 375.00 ml shredded cooked chicken
  • 42.00 gm salt-reduced soy sauce
  • 24.40 gm oyster sauce
  • 125.00 ml frozen peas
  • 2 green onions, thinly sliced
Instructions:
  • In a jug, whisk together eggs and half of the sesame oil. Heat a wok over high heat and add peanut oil, swirling to coat. Pour in half of the egg mixture and swirl to cover the base of the wok. Cook for 30 seconds or until just set. Transfer the cooked egg to a board and repeat with the remaining egg. Roughly chop the cooked egg.
  • Place the wok back over the heat and toss in the sausage and onion. Cook while stirring for 2 to 3 minutes until the sausage is nicely browned. Introduce the garlic, ginger, and chili (if desired), and stir for 1 minute until fragrant. Pour in the rice wine and sugar, stir for 30 seconds.
  • Combine rice, chicken, sauces, peas, and remaining sesame oil in the wok. Stir-fry for 2 minutes or until heated through. Add egg and toss to combine. Serve sprinkled with green onion.
