Spice-roasted beetroot

Elevate beetroot with garlic, cumin, paprika, coriander, and chili for a sensational side dish.
Ingredients:
  • 2 (300g each) trimmed beetroot, peeled
  • 2 garlic cloves, crushed
  • 5.00 gm ground cumin
  • 2.50 gm sweet paprika
  • 2.40 gm sea salt
  • 1 tsp coriander
  • 1/2 tsp dried chilli flakes
  • 18.20 gm extra virgin olive oil
Instructions:
  • Preheat your oven to 220C/200C fan-forced, then line a small roasting pan with baking paper.
  • Dice beetroot into 3cm cubes, then transfer to a baking dish. Mix in garlic, cumin, paprika, salt, coriander, chilli, and oil. Season with pepper and toss to coat evenly. Roast for 30 minutes, flipping halfway, until beetroot is tender. Let cool completely before serving.
  • Store the beetroot in an airtight container in the refrigerator for up to 5 days.
