Spiced apricots with orange yoghurt panna cotta

Make this indulgent Italian dessert with sweet and spicy apricots.
Ingredients:
  • 1 orange
  • 300ml pouring cream
  • 75g caster sugar
  • 6.00 gm gelatine
  • 185g yoghurt
  • 40.00 gm caster sugar, extra
  • 1 vanilla bean, split
  • 4 cardamom pods, lightly crushed
  • 200g dried apricot
Instructions:
  • Grate the orange rind finely, then combine it with cream and sugar in a saucepan. Stir over heat until the sugar dissolves. Bring it to a gentle boil, then remove from heat and let it sit for 5 minutes.
  • Combine 2 tablespoons of water with gelatine in a small bowl, allowing it to stand for 5 minutes until fully dissolved. Then, mix it into the cream mixture thoroughly.
  • After straining into a bowl and cooling to room temperature, gently stir occasionally. Incorporate yoghurt until fully combined. Divide mixture into four 1/2 cup ramekins and refrigerate for 3 hours until firm.
  • Extract orange juice and dilute with water to reach 1 cup. Introduce vanilla bean, cardamom, cinnamon, and apricots into the mixture. Let it simmer for 15 minutes. Take out the apricots. Blend in additional sugar into the juice. Boil until thickened to a syrup consistency. Drizzle over apricots and allow to cool.
  • Unmold the panna cotta and garnish with apricots and syrup for a delightful presentation.
