Spiced baked chickpeas - a fiery, satisfying vegetarian snack.
Ingredients:
  • 1 can (15 oz) Progresso™ chickpeas (garbanzo beans), drained, rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Dash ground red pepper (cayenne)
  • Salt to taste
Instructions:
  • Preheat the oven to 350°F. Coat chickpeas with all ingredients in a medium bowl. Spread the mixture in a single layer on an ungreased 15x10x1-inch pan or cookie sheet.
  • Bake for 25 to 35 minutes, making sure to stir halfway through, until chickpeas are dry and toasted.
