"Enjoy the exquisite simplicity of this flavorful roast lamb dish."
Ingredients:
  • 2.2kg leg of lamb, bone removed, meat butterflied
  • 18.20 gm olive oil
  • 25.00 gm bush blend spice mix
Instructions:
  • Place the lamb flat in a large ceramic dish. Drizzle half of the oil over the lamb and massage in half of the spice mix using your fingertips. Flip the meat and repeat with the remaining oil and spice mix. Cover and refrigerate for 30 minutes.
  • Preheat the barbecue grill on high heat until sizzling. Grill the lamb, starting with the fat side down, for 3 minutes on each side. Lower the heat to medium and continue grilling for 15 minutes on each side for a medium cook, or until it reaches your preferred level of doneness. Remove the lamb from the grill, place it on a plate, cover it loosely with foil, and let it rest for 15 minutes. Slice the lamb thinly and serve.
