Spiced Butternut Squash Muffins

Delicious squash muffins bursting with flavor!
Ingredients:
  • 0.5 pound peeled, seeded and cubed butternut squash
  • 1.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 cup white sugar
  • 0.25 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 0.75 cup milk
  • 1 egg, beaten
  • 1 tablespoon butter, melted
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and lightly grease a 12-cup muffin pan.
  • Boil the squash in a saucepan filled with water until tender, about 20 minutes. Drain and puree in a food processor.
  • Combine flour, baking powder, white sugar, salt, and pumpkin pie spice in a large bowl and whisk together until well blended.
  • Combine milk, egg, and butter in a medium bowl, mix well. Add squash and gently fold into the flour mixture until just combined.
  • Fill the muffin pan with batter halfway. Bake in the preheated oven for 20 minutes or until a toothpick comes out clean when inserted in the center of a muffin. Cool on a wire rack after removing from the pan.
