Cheesy lamb mince with coriander and cumin, a delicious crustless pizza alternative.
Ingredients:
500g lamb mince
2eggs, lightly whisked
25g (1/4 cup) dried (packaged) breadcrumbs
3garliccloves, crushed
40.00 ml choppedfresh coriander
5.00 gm ground cumin
75g Danish feta, crumbled
18.20 gm olive oil
33.30 gm tomato paste
100g (3/4 cup) finely gratedmozzarella
125g cherry tomatoes, halved
60g baby spinach leaves
Fresh coriander leaves, to serve
Instructions:
Preheat your oven to 220C. Combine mince, egg, breadcrumbs, garlic, coriander, cumin, and one-third of the feta in a bowl using your hands until fully mixed. Season with salt and pepper to taste.
Start by heating the oil in an ovenproof non-stick frying pan. Afterward, remove from heat and spread the mince mixture evenly in the pan. Then, on medium heat, top the mixture with tomato paste, mozzarella, tomato, and feta before placing it in the oven.
Bake until golden brown and cooked through, about 10-15 minutes. Serve alongside fresh spinach and fragrant coriander leaves.
