Spiced lamb and pumpkin soup

Savory lamb and pumpkin soup - a delicious fusion of comfort and warmth.
Ingredients:
  • 750g Diced Lamb
  • 1 brown onion, thinly sliced
  • 1 red capsicum, seeded, finely chopped
  • 20.00 ml Moroccan seasoning
  • 1 garlic clove, finely chopped
  • 1L salt-reduced chicken stock
  • 400g can Brand Italian Diced Tomatoes
  • 750g Naranka Gold pumpkin, peeled, seeded, chopped
  • 400g can chickpeas, rinsed, drained
  • Coriander leaves, to serve
  • Flatbread, to serve
Instructions:
  • In a large, heavy-based saucepan, heat half of the oil over high heat. Brown the lamb in 2 batches for 5-6 mins each. Transfer to a plate. Add the remaining oil to the pan over medium heat. Cook the onion and capsicum until the onion softens, about 4-5 mins. Add Moroccan seasoning and garlic, cooking until fragrant, about 1-2 mins.
  • Place the lamb back into the pan. Pour in the stock and tomatoes, then bring to a boil. Lower the heat, cover, and let it simmer for 1 hour until the meat is tender. Add the pumpkin and chickpeas, cover again, and simmer for another 25-30 minutes. Serve in bowls, garnish with coriander leaves, and enjoy with flatbread.
