Vibrant salad bursting with textures, aromas, and flavors.
Ingredients:
  • 20.00 ml coriander seeds
  • 2 tsp fennel seeds
  • 2 (about 200g each) lamb backstraps (eye of loin)
  • 36.40 gm extra virgin olive oil
  • 2 oranges, peeled, segmented
  • 1 red onion, thinly sliced
  • 1 bunch flat-leaf parsley, leaves picked
  • 1 bunch mint, leaves picked
  • Natural yoghurt, to serve
Instructions:
  • Crush coriander and fennel in a mortar with a pestle until fragrant. Season with salt and pepper. Coat lamb by rolling it in the spice mix on a plate, applying gentle pressure.
  • In a large frying pan over medium-high heat, heat half of the oil. Sear the lamb for 2-3 minutes on each side for medium doneness, or until cooked to your preference. Remove the lamb from the pan and cover with foil. Let it rest for 5 minutes before serving.
  • Combine the orange, onion, parsley, mint, and chickpeas in a bowl. Drizzle with remaining oil, season with pepper, and arrange on serving plates. Slice the lamb thickly and place on top of the salad. Serve with natural yogurt, if preferred.
