Spiced lamb wraps with roast capsicum hummus

Whip up quick and flavorful spiced lamb wraps for a hassle-free and casual dinner option.
Ingredients:
  • 800g lamb loin steaks, meat cut into 3cm pieces, bone discarded
  • 3 garlic cloves, chopped
  • 2.50 gm ground cumin
  • 1 tsp ground sumac
  • 1 tsp ground coriander
  • 310ml beef stock
  • 400g can chopped tomatoes
  • 100g marinated roasted capsicum, drained
  • 48.00 gm tahini
  • 1/2 lemon, finely grated zest and juiced
  • Lemon wedges, to serve
  • 4 Lebanese breads, warmed
  • Thick Greek-style yoghurt, to serve
  • Fresh mint leaves, torn, to serve
  • Chilli pickles, to serve
Instructions:
  • In a heavy-based saucepan over medium-high heat, heat 2 tablespoons of oil until sizzling. Sear lamb on all sides for 3-4 minutes until beautifully browned. Transfer lamb from pan and set aside.
  • Heat the oil in a pan, then sauté the onion, garlic, and spices for 2-3 minutes until fragrant. Stir in the stock and tomatoes, add the lamb back to the pan, and bring to a simmer. Lower the heat to medium-low and simmer for 35-40 minutes until the lamb is tender and the sauce has thickened.
  • Combine chickpeas, capsicum, tahini, lemon zest and juice, remaining garlic, and 1 tablespoon of oil in a small food processor. Process until smooth to make the hummus.
  • Generously layer hummus on the bread, then add flavorful spiced lamb, yogurt, fresh mint, and spicy chili pickles. Garnish with additional lemon wedges to serve.
