Spiced meatballs in cream sauce

Enhance spiced meatballs with veggies, serve with fettuccine, and savory tomato herb sauce.
Ingredients:
  • 70g (1 cup) fresh wholemeal breadcrumbs (made from day-old bread)
  • 60ml (1/4 cup) pouring cream
  • 60ml (1/4 cup) milk
  • 1 brown onion, coarsely chopped
  • 1 carrot, peeled, coarsely chopped
  • 1 small zucchini, coarsely chopped
  • 400g beef mince
  • 1 egg
  • 2.50 gm ground ginger
  • 1.25 gm ground nutmeg
  • 27.30 gm olive oil
  • Mashed potato, to serve
  • Steamed green round beans, to serve
  • 20.00 gm butter
  • 3 tsp plain flour
  • 125ml (1/2 cup) pouring cream
  • 125ml (1/2 cup) milk
  • 1/2 chicken stock cube, crumbled
  • 0.63 gm ground nutmeg
Instructions:
  • Mix breadcrumbs, cream, and milk in a bowl and let it soak. Use a food processor to finely chop the onion, carrot, and zucchini.
  • Incorporate the vegetable mixture, ground meat, egg, ginger, and nutmeg into the breadcrumb mixture. Season generously with salt and pepper. Thoroughly mix until fully combined. Chill in the fridge for 30 minutes or until firm.
  • To prepare the cream sauce, melt butter in a small saucepan over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in cream, milk, and stock. Simmer and stir occasionally for 3 minutes until the sauce thickens. Add nutmeg and season with pepper.
  • Shape the mince mixture into tablespoon-sized balls. Heat half of the oil in a large frying pan over medium heat and cook half of the meatballs, turning occasionally, for 6-8 minutes until golden and fully cooked. Place cooked meatballs on a plate and cover with foil to retain warmth. Repeat the process with the remaining oil and meatballs.
  • Arrange the meatballs, mashed potato, and beans on serving plates. Drizzle with the creamy sauce and sprinkle with freshly ground pepper. Enjoy!
