Deliciously spiced curried parsnip soup, perfect as a flavorful starter for your dinner party.
Ingredients:
  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 1 pound parsnips, peeled and cubed
  • 1 clove garlic, finely chopped
  • 2 teaspoons curry powder
  • 1 cube chicken bouillon
  • 3.25 cups boiling water
  • 0.5 cup heavy cream
  • 1 pinch ground paprika
Instructions:
  • In a large saucepan over medium heat, let the butter melt until it sizzles. Add in the onion and sauté until it turns beautifully translucent, which will take around 5 minutes. Toss in the parsnips, garlic, and curry powder, then cook and stir until the aromas make your kitchen come alive, which will be about 2 minutes.
  • Dissolve bouillon in boiling water, then pour into the saucepan, scraping to release any flavorful browned bits. Simmer until parsnips are tender and easily breakable with a wooden spoon, approximately 15 minutes.
  • Blend soup until velvety smooth using an immersion blender. Gently incorporate cream and heat for 2 to 3 minutes without bringing to a boil. Season with salt and pepper, then sprinkle with paprika for a beautiful finish.
