Tangy marinated beet salad with cider vinegar, sugar, spices, and onion for a refreshing and flavorful side dish.
Ingredients:
  • 2.5 cups sliced canned beets, juice reserved
  • 0.5 cup apple cider vinegar
  • 2 tablespoons sugar
  • 2 whole cloves
  • 3 black peppercorns
  • 1 bay leaf
  • 0.5 teaspoon salt
  • 1 small onion, sliced
Instructions:
  • Transfer the beets to a medium bowl and let them sit.
  • Combine vinegar, beet juice, sugar, cloves, peppercorns, bay leaf, salt, and onion in a saucepan. Bring to a boil, then pour over beets. Toss well to coat, cover, and chill until very cold before serving.
