Vegetable soup with cheesy bread croutons for a comforting, delicious meal.
Ingredients:
  • 20g butter
  • 18.20 gm extra virgin olive oil
  • 1 brown onion, coarsely chopped
  • 1-20.00 gm Moroccan spice mix or curry powder
  • 1.1kg (approximately) root vegetables, peeled, chopped
  • 1L (4 cups) chicken style liquid stock or vegetable liquid stock
  • 2-3 large slices sourdough bread
  • 70g Swiss cheese, cheddar or mozzarella cheese grated
  • Fresh herbs, to serve (optional)
Instructions:
  • In a large saucepan over medium-high heat, melt the butter with oil. Sauté the onion, stirring frequently, for about 8 minutes until golden brown.
  • Pour the aromatic spice mix into the saucepan and stir for 30 seconds. Toss in the vegetables and ensure they are coated. Pour in the stock and bring to a boil. Lower the heat, partially cover, and simmer for 25-30 minutes until vegetables are tender. Allow to cool slightly before serving.
  • 1. Preheat the oven grill on high. 2. Blend the soup until smooth with a stick blender. 3. Sprinkle cheese on the bread. 4. Place the cheese-topped bread on the soup. 5. Grill for 5 minutes or until the cheese is bubbling. 6. Sprinkle with herbs, if desired.
