Spiced Skillet Vegetables

Spicy skillet dinner with carrots, bell pepper, zucchini, and beans. Ready in just 25 minutes!
Ingredients:
  • 2 teaspoons vegetable oil
  • 2 medium carrots, sliced (1 cup)
  • 1 large onion, chopped (1 cup)
  • 1 large red bell pepper, cut into 3/4-inch pieces (1 cup)
  • 2 cloves garlic, finely chopped
  • 1 can (15 to 16 oz) garbanzo beans, rinsed and drained
  • 1 small zucchini, sliced (1 cup)
  • 1/2 cup raisins
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon pepper
  • 2 tablespoons chopped fresh parsley
Instructions:
  • Heat oil in a large nonstick skillet over medium-high heat. Sauté carrots, onion, bell pepper, and garlic for about 4 minutes, stirring often, until the onion is tender.
  • Combine all remaining ingredients, excluding parsley. Cook for approximately 5 minutes, stirring regularly, until the zucchini is tender. Garnish with parsley before serving.
