Irresistible spicy carrot-ginger drink, perfect with or without alcohol.
Ingredients:
  • 1 lime, halved crosswise
  • 3 slices fresh ginger, plus more for garnish
  • 1 sprig fresh mint
  • Ice
  • 2 ounces purchased carrot juice
  • 1 ounce silver tequila
  • 1/2 ounce chile liqueur or Ancho Syrup (see recipe, below)
  • 1 1/2 ounces ginger beer
Instructions:
  • Cut 1 lime in half lengthwise, then cut each half into 4 pieces. Add the lime pieces to a cocktail shaker along with ginger and a mint sprig. Muddle the mixture for about 1 minute until everything is well combined, crushed, and juicy.
  • Fill the cocktail shaker halfway with ice. Pour in carrot juice, tequila, and chile liqueur. Cover and shake vigorously for about 60 seconds until the shaker frosts. Strain the mixture into a glass filled with ice and pour ginger beer on top. Use the remaining lime half to cut a lime wheel for garnish along with ginger slices.
