Spicy Asian vegetable stir-fry ready in 15 minutes with minimal ingredients.
Ingredients:
  • 2 cups uncooked instant rice
  • 1 bag (12 oz) frozen Asian style vegetable medley
  • 1 package (10 oz) refrigerated grilled chicken breast strips
  • 1/2 cup spicy stir-fry sauce
  • 1/3 cup chopped dry-roasted peanuts
Instructions:
  • Prepare the rice according to package instructions. In a microwave-safe bowl, microwave the vegetables uncovered on High for 5 to 6 minutes.
  • Preheat a 12-inch skillet over medium-high heat. Add in the vegetables, chicken, and stir-fry sauce. Cook and stir until everything is heated through.
  • Pour the flavorful chicken mixture over a bed of fluffy cooked rice. Scatter a generous amount of peanuts for a satisfying crunch. Optionally, crown it with a sprinkle of fresh chopped green onions for a burst of color and flavor.
