Spicy Chile Lime Shrimp

Crispy fried shrimp combined with spicy chile peppers, tangy lime juice, and onions for a zesty meal over salad or rice.
Ingredients:
  • 1 pound cooked tiger shrimp, thawed and tails removed
  • 3 tablespoons soy sauce
  • 1 tablespoon vegetable oil, or to taste
  • 1 medium onion, diced
  • 2 jalapeno peppers, diced
  • 3 cloves garlic, diced
  • 1 (1/2 inch) piece ginger, grated
  • 1 lime, halved
  • 0.5 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.33333334326744 cup milk, or as needed
  • 0.5 cup vegetable oil for frying
Instructions:
  • Combine the shrimp with the soy sauce in a bowl and let it marinate.
  • In a large skillet over medium heat, warm 1 tablespoon of oil. Cook the onion until soft and translucent for about 5 minutes. Stir in jalapeno peppers, garlic, and ginger. Squeeze in half of the lime and stir until well combined for about 2 minutes. Take the skillet off the heat.
  • Combine the flour, baking powder, and salt in a bowl. Gradually pour in the milk until the batter reaches a thin, runny consistency.
  • In a hot frying pan, heat 1/2 cup of oil. Coat shrimp in batter, fry until golden on both sides (about 1 minute each). Combine fried shrimp with jalapeno mixture, and drizzle with lime juice.
