Spicy cornmeal waffles topped with fresh pico de gallo and creamy avocado - a delicious twist on a classic breakfast favorite.
Ingredients:
  • 2 cups Bisquick™ Original pancake and baking mix
  • 1/4 cup yellow cornmeal
  • 1 1/2 cups buttermilk
  • 1 egg
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 3/4 cup shredded Cheddar cheese (3 oz)
  • 1 1/2 cups pico de gallo or salsa
  • 1 avocado, sliced
  • 1/2 cup queso fresco
Instructions:
  • Preheat the waffle maker and lightly brush with vegetable oil if needed. In a medium bowl, combine Bisquick™ mix, cornmeal, buttermilk, oil, egg, chili powder, and cumin until well mixed. Add shredded cheese and let the mixture sit for 10 minutes to allow the cornmeal to soften.
  • Ladle 1/2 cup of batter onto the center of the preheated waffle maker, spreading it to 1/2 inch from the edge. Close the lid and cook until the waffle is golden brown and no longer steaming. Carefully remove the waffle and continue with the remaining batter as needed.
  • Serve each warm waffle topped with 1/4 cup pico de gallo, 3 avocado slices, a generous sprinkle of cilantro, and a generous sprinkle of queso fresco.
