Quick and tasty fish tacos - a hit with kids and perfect for a quick and easy dinner!
Ingredients:
  • 1 pound tilapia fillets
  • 2 tablespoons taco seasoning mix
  • 1 (4.6 ounce) package taco shells
  • 1 (6 ounce) container plain yogurt
  • 1 teaspoon lime juice
  • 1 teaspoon white sugar
  • 0.5 teaspoon grated lime zest
  • 0.25 teaspoon salt
  • 4 cups coleslaw mix
  • 2 tablespoons chopped fresh cilantro
  • 1 small jalapeno chile, seeded, finely chopped
  • 1 tomato, seeded and diced
Instructions:
  • Coat tilapia fillets generously with zesty taco seasoning.
  • Heat oil in a large skillet over medium heat. Sear fish until easily flaked with a fork, about 3-4 minutes per side. Remove from heat and chop into bite-size pieces.
  • Preheat your oven to 325°F (165°C).
  • Bake taco shells in a preheated oven until they are crisp, for about 5 minutes.
  • In a large bowl, combine yogurt, lime juice, sugar, lime zest, and salt. Add coleslaw mix, cilantro, and jalapeno; allow to sit for 5 minutes.
  • Fill each taco shell with a generous portion of 1/4 cup fish and 1/4 cup coleslaw mixture. Finish by garnishing each taco with a tablespoon of tomato on top.
