Spicy Cajun mayo, avocado, and cilantro elevate broiled fresh corn into a summer sensation.
Ingredients:
  • 4 ears fresh corn
  • 1 shallot, chopped
  • 1 tablespoon grapeseed oil
  • 1 pinch salt and ground black pepper to taste
  • 4 tablespoons Cajun mayonnaise
  • 2 tablespoons chopped cilantro
  • 1 small avocado, diced
Instructions:
  • Position an oven rack 6 inches below the broiler and preheat the broiler in the oven.
  • Prepare the corn by shucking and removing the silks, then cut the kernels off the cob. Transfer the kernels to a rimmed baking sheet and add green pepper and shallot. Drizzle with oil, season with salt and pepper, toss to combine, and spread out evenly.
  • Broil in the preheated oven for 5 minutes until fragrant. Stir and spread on the sheet. Broil for an additional 5 minutes until corn starts to brown. Let cool for 5 minutes.
  • Combine the vegetables in a large bowl. Mix in mayonnaise, lime juice, and cilantro until well coated. Carefully fold in the avocado.
